Today is Jon’s 43rd birthday.

He LOVES German chocolate cake and claims it’s his favorite sweet thing – so I tracked down a recipe that doesn’t involve double broilers or water baths – because seriously: I don’t know what either of those things are and don’t want to know.

I wanted to make the cake myself, though, because I have time and because he’s a total food snob (meaning he’d be very happy).

I can’t believe I did it. I actually made an ENTIRE cake – including these fluffy egg whites – for the first time in my life.

It was actually kind of fun.

I’m not sure why it’s so drippy. I either didn’t cook the frosting (or “filling” according to the recipe) long enough or I didn’t let it cool long enough. Either way – it tastes fantastic.

I hope he likes it.

I’m sure I looked like quite the sight as I strolled through the grocery store after a workout buying nothing but flour and sugar and chocolate and buttermilk in my dripping wet gym clothes – and it occurred to me that it might be ridiculous to make a cake that will likely destroy any progress made during that workout – but whatever. Those thoughts are easily ignored these days.

I didn’t get fat eating this way.

I got fat eating margarine and low-fat milk and nearly whole cakes from a box and fast food every day. I didn’t get fat eating one piece of birthday cake – and I certainly didn’t lose weight restricting this sort of thing, either, because I’ve eaten cake all along. I played a bunch of mental games with the restricting and then the “giving in/giving up” and made myself crazy – FOR SURE – but I’m beyond ready to be done with that. It’s just a constant challenge.

Anyway.

Jon put a bunch of stuff in the crockpot before he left this morning – so all I had to do was turn a knob to make dinner. It’s chicken + celery + an apple + parsnips, I think. It came from everydaypaleo.com.

Jon grilled these Spicy Buffalo Chicken things the other day – and made some blue cheese dressing, too, but I can’t find the recipe on Mark’s Daily Apple and am thinking maybe he just adapted the ranch that’s listed on the recipe page?

Wherever he got it – it’s fabulous.

I’ve been halfheartedly counting calories via FitDay, but I rarely make it to the end of the day. I’m not overly concerned, but I DO want to lose weight – so I’ll give it a few more weeks and see how things shake out now that life has settled and I’m back to a regular (every day) workout situation. I don’t want to get all militant unless I just have to.

Time for cake!
